Apple Rumaki

serves 6-8

Crispy bacon-wrapped apple baked in the oven and drizzled with maple syrup.

  • 3 large gala apples

  • 1 lb bacon, applewood

  • Pure maple syrup

Classic Bruschetta

serves 6-8

Fresh tomatoes, red onion, & basil from the garden tossed in balsamic and olive oil. Served with toasted baguette.

  • 6 medium tomatoes

  • 1 red onion

  • 1/4 lb fresh basil

  • Balsamic vinegar

  • Extra virgin olive oil

  • Salt & pepper to taste

 
 
 

Grilled Herbed Chicken

serves up to 4

Organic spring chicken rubbed with aromatic herbs and Irish butter.

  • 3 lb whole organic chicken

  • 2 oz. each of rosemary, thyme, oregano, & parsley

  • 1/2 lb pure Irish butter

  • Salt & pepper to taste

Artichoke Parmesan Dip

Serves 6-8

Fantastic dip for parties! Cream cheese-based dotted with artichoke hearts, Parmesan cheese, dried herbs, and garlic.

  • 2 lb cream cheese

  • 1 C sour cream

  • 1 C mayonnaise

  • 1 C artichoke hearts

  • 3/4 C shredded Parmesan

  • Herbs, spices, salt & pepper to taste

  • 1/4 C grated Romano

 
 
 

Stuffed Squash with Quinoa

Serves 2-4

Vegetarian or vegan dish filled with flavor! Zucchini and yellow squash filled with vegetables and red & brown quinoa.

  • 2-4 each zucchini or yellow squash

  • 1 C cooked quinoa

  • 1/2 C diced carrot

  • 1/4 C red bell pepper

  • 1/4 C fresh sweet peas

  • 2 T red onion

  • 1/2 C shredded Parmesan, optional

  • Olive oil, salt & pepper to taste

Summer Cucumber Salad

serves 4-6

The best summer salad ready for any garden party or family outing! Crunchy cucumbers marinated in a creamy apple cider dressing.

  • 3-4 garden cucumbers

  • 1/2 C mayonnaise

  • 1/4 C sugar, granulated

  • 1/4 C apple cider vinegar

  • Dill

  • Salt & pepper to taste

Serves 4-6

Unbelievably delicious sorbet filled with raspberries, strawberries, blueberries, & blackberries.

  • 4-5 C mixed berries

  • 1 1/2 C simple syrup

  • Mint & berries for garnish

Vegan Brownies

serves 4-6

Vegan brownies with a surprising base: zucchini! Add walnuts to this cocoa batter for crunch and flavor.

  • 2 C whole wheat pastry flour

  • 2-3 zucchinis

  • 1/2 C brown rice syrup

  • 3/4 C coconut sugar

  • 1/2 C avocado oil

  • 1 T organic vanilla extract

  • 1/2 C cocoa powder

  • Spices & sea salt

  • 3/4 C walnuts

  • 3/4 C non-dairy chocolate chips
